This is just a basic recipe. You can swap for a different vinegar you have on hand and/or add herbs and spices to your liking. I prefer my dressings tangy, so I use this 2:1 ratio of olive oil to vinegar but if you don't love vinegar as much, try this method with a 3:1 ratio of oil to vinegar instead. Making homemade salad dressings is a great way to save money and control the ingredients, and it just takes an extra minute to prep.
• 3 Tbsp olive oil
• 1 1/2 Tbsp red wine vinegar
• 1 tsp honey
• 1 tsp your favorite mustard
• pinch of salt & pepper
Whisk ingredients together in a bowl or add them to an airtight container and shake to combine. That's it!

• 1/2 cup pancake mix
• 1/3 cup water

1. In a mug, combine pancake mix and water. Add your favorite muffin mix-ins.
2. Microwave for 90 seconds, or until batter is cooked thoroughly.
3. Top with nut butter or pair with Greek yogurt for a balanced breakfast!
I love making French toast because you can use ANY bread you have on hand, yes even leftover hotdog buns 😂 When you have no desire to wake up early for a real French toast experience, this microwaveable shortcut is the perfect weekday fix! I typically use thawed frozen berries, but you can swap for any chopped fruit like apples, peaches, banana. Get creative with different mix-ins and toppings to use your favorite ingredients, or just whatever you have on hand!
• 1 egg
• 1 Tbsp milk
• dash of cinnamon
• 2 slices of bread (torn in pieces)
• 1/4 cup berries

1. In a mug, whisk to combine egg, milk, and cinnamon.
2. Stir in bread pieces and berries until everything is coated in egg mixture.
3. Microwave for 60 seconds, stir, microwave 30 more seconds
or until egg is cooked.
4. Add toppings like chocolate chips, nuts, more fruit, or maple syrup!

• 1 diced apple (or 1/2 if it's big)
• 1/3 cup old fashioned oats
• 1Tbsp flax meal or chia seeds (optional)
• dash of cinnamon
• ~ 2/3 cup milk
• 1 Tbsp nut butter
• chocolate chips
• Greek yogurt
1. In a microwave-safe bowl, combine diced apple, oats, flax, chia, and cinnamon.
2. Add just enough milk to cover everything, then stir in nut butter.
3. Microwave for 2 minutes, stirring as needed so it doesn't overflow.
4. Top with chocolate chips and Greek yogurt, and enjoy a delicious filling breakfast!
